However, there’s an opportunity to indulge without remorse by preparing a cake using low-calorie ingredients that will satisfy even the greediest palate. Delicious light cake as airy as a cloud
The ingredients we will need are: 150 grams of light cow’s ricotta, 180 grams of cake flour, 3 tablespoons of granulated sugar, 2 eggs, 120 ml of skimmed milk, 20 ml of lemon juice, and 1 grated lemon zest, 1 sachet of vanillin, 1 sachet of baking powder, 1 tablespoon of liqueur, chopped hazelnuts, or icing sugar for garnish.
Start by flouring, greasing, or lining a 24cm diameter cake tin with baking paper. Whisk together the eggs, sugar, milk, and vanilla in a bowl. Add the ricotta, followed by the flour, baking powder, and liqueur. Mix the ingredients until you obtain a creamy mixture.
Bake the cake in the oven at 338°F (or 170°C) for 35 minutes. Once the dessert is fully cooked, let it cool in the turned-off oven for a few minutes. Then, take it out of the oven, garnish it with icing sugar or chopped hazelnuts, and enjoy its delightful flavor.
In this light cake recipe, you can go even lighter by substituting sugar with sweetener or erythritol, which has the same flavor and sweetening power but practically zero calories. Instead of cow’s milk, we can use soy milk; instead of cake flour, we can use whole oat flour or whole wheat flour, cornflour, or almond flour.
